after a long time of not having granola, I made a fresh load last night and afterwards went to sleep with the nicest chocolatey smell all over the appartment, which gave me the sweetest dreams! In the morning, I was up in seconds, because I couldn’t wait for breakfast… What I really liked about this recipe is that the granola is not too sweet, but yet so crispy and that it has this amazingly rich chocolate flavor!
100 g almonds
30 g coconut oil
15 g unsweetened cacao powder
60 g dark chocolate
30 g honey/maple syrup
250 g mixed rolled oats
1/4 tsp salt
Coarsley chop the almonds and chocolate (seperately) and set aside. TM5: chop each at a time for 2 sec/speed 6 and set aside. Preheat your oven to to 170°C (top and bottom heat).
Melt coconut oil and 30 g chocolate and stir in cacao powder, salt and honey. TM5: Place coconut oil, 30 g chocolate, cacao powder, salt and honey in the mixing bowl and melt for 2 min/65°C/speed 1,5.
Add the oats and almonds and combine well. TM5: 1 min//speed 3.
Evenly spread the mixture on a lined baking tray or grid and bake the granola for 7 minutes, stir up and bake for another 7 minutes.
Leave to cool completely before adding 30 g chopped chocolate and store it in an air tight jar.
Enjoy your fresh home made chocolate granola with yogurt and fruits, classically with milk or as a topping for you favourite bowls!
