Delicious Quick Apple Cake

well, I guess you all know the urgent crave for cake you get every once in a while… Here’s how you deal with it: you can either suck it up and be unhappy, or bake this beautiful and quick apple cake. So, without the story behind the cake, here is the recipe for you to feed your tummy something delicious ; )

300 g plain flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
2 tsp vanilla sugar
5 tbsp raw brown sugar
2 eggs
40 g olive oil
200g buttermilk
1 lemon (juice)
5-6 apples
2 tbsp apricot jam or quince jelly
50 ml white wine

Peel and quarter apples. Mix all ingredients (only 3 tbsp raw brown sugar) apart from apples until you have a smooth dough (TM5: 20 sec/speed 4). Grease a spring form and pour in dough. Place apple quarters on top and sprinkle with 2 tbsp raw brown sugar and some cinnamon if you like and bake at 180°C for about 25-35 min., depending on the width of your spring form. Take out when the cake looks nice and golden. Heat up some apricot or quince jam or jelly with the white wine and, using a brush, spread the mixture on the cake. Sprinkle with sliced almonds and enjoy lukewarm.
